First Course
Thai basil loaf with sambal butter
A pull-apart loaf inspired by flaky scallion pancakes with an infusion of Indonesian sambal butter...
Second Course
Crispy jollof risotto, crawfish butter, maafe veloute
Jollof arancini filled with a sweet and smokey crawfish butter. Maafe veloute inspired by Chef Dominique’s trip to France where she experienced Senegalese cuisine.
Third Course
Watermelon & kaffir lime granita
Summer is here with this seasonal refresher! Surprise notes of kaffir lime in line with this menu’s southeast asian influence.
Fourth Course
Peppered lamb, carrot puree, potato mille-feuille, salsa macha
Inspired by West African stews, but not quite what you’d expect… 18-hour lamb, peppered and pressed into a terrine with a sweet carrot puree, potato mille-feuille, finished with scent leaf oil
Fifth Course
Strawberries, Sumac & scent leaf
Seasonal strawberries, sumac crumble, scent leaf sponge
